Smoked almond, mint and basil pesto

The addition of smoked almonds and mint adds an earthy twist to traditional basil pesto.  Blend all ingredients in a hand blender mini chopper and serve with pasta or as a dip as we have here with grissini and cherry tomatoes.

Serves 4

½ bunch basil, leaves removed

½ bunch mint, leaves removed

1 clove garlic

2 tablespoons smoked almonds

¼ cup grated parmesan cheese

125ml (1/2 cup olive oil)

Place all ingredients in a Smeg hand blender mini chopper and blend until smooth.

Serve with your choice of crispy bread, crackers or crudites.
