Lunchbox muesli bars

Big and little kids will love these refined sugar-free muesli bars.  We used good quality sugar-free prepared muesli to save time; should you need to satisfy particular dietary requirements, select a gluten free or nut free mix.  If you wish, you can also add extra dried fruit or seeds such as sunflower or pumpkin.

Makes 12 bars

1/3 cup (80g) honey 80g

1/3 cup (80ml) pure maple syrup

125ml (½ cup) coconut oil

500g good quality muesli

2 teaspoons cinnamon

½ cup (60g) sesame seeds

1½ tablespoon cornflour [use gluten-free if you wish]

Set your oven to fan forced and preheat to 170⁰C. Line a 20cm x 30cm slice tin with baking paper.

Warm the honey, maple syrup and coconut oil in a small saucepan over low heat.

Place remaining ingredients in a large bowl and mix well.  Add warm honey maple mixture and stir until combined.

Spoon the mixture into the prepared tin, pressing to fit.  Bake for 25 minutes for chewy bars or 30 minutes for slightly crunchier bars.  Allow to cool before wrapping individually in paper.  Store in an airtight container in the fridge for 5 days or freeze for up to 3 months.
