Christmas Shortbread

INGREDIENTS
- 250g Butter - room temperature and cubed 
- 3/4 cup of Caster Sugar 
- 1/4 cup of Rice Flour 
- 2 1/4 cup of Plain Flour 
- Melted chocolate of your choice 
METHOD
- Cream butter and sugar together until pale. 
- Stir in sifted rice flour and plain flour. 
- When mixture becomes stiff, use your hand to combine on a lightly floured surface. 
- Bring the dough together and wrap in baking paper to place in the fridge for half an hour. 
- Once cooled, roll the dough between two sheets of baking paper. 
- Cut into shakes using a cookie cutter and place on a tray lined with baking paper. 
- Cook in oven for 30 minutes at 150°C. 
- Cool on trays and decorate with a drizzle of chocolate of your choice.
