Bruschetta

Makes 8

8 slices sourdough bread

3 tablespoons olive oil

3 medium tomatoes, diced

1 small bunch basil, chopped

1 small red onion, finely chopped

1 clove garlic, finely chopped

Salt & pepper

Toast sourdough bread. Brush with olive oil and garlic.

Combine remaining 2 tablespoons olive oil with tomatoes, basil, onion and garlic and season to taste with salt and pepper.

Serve toasted bread topped with tomato mixture.
