Made By Mandy’s Valentine’s Dinner: Spaghetti Carbonara & Campari Spritz

INGREDIENTS
200g spaghetti*
100g guanciale
2 egg yolks + 1 whole egg
75g grated parmesan
75g grated pecorino
Freshly cracked black pepper
METHOD:
1. Chop the guanciale into small bite-sized pieces. Place a large shallow pan over low-medium heat. Add the guanciale and gently cook until the fat becomes transparent and the meat is lightly golden; approximately 8-10 minutes. Remove the guanciale from the pan and set aside (leave the fat in the pan).
2. Bring a large pot of salted water to the boil. Add the pasta and cook until al dente.
3. In a medium bowl, thoroughly whisk the eggs and yolks. Add the grated parmesan, pecorino, and 1–2 teaspoons of cracked black pepper (adjust to taste). Whisk again until well combined.
4. Once the pasta is al dente, use tongs to transfer it to the pan with the guanciale fat over low heat, tossing to coat.
5. Remove the pan from the heat. Pour in the egg mixture and about ½-¾ cup pasta water and stir vigorously until glossy, creamy and thickened slightly.
6. Return half the guanciale to the pan and toss to combine. Serve immediately, finishing with extra black pepper and the remaining guanciale (and extra cheese, if you like!).
Tips:
*Use high-quality pasta - bronze-extruded, artisanal, or slow-dried. The rough surface and ridges help the sauce cling for a creamier dish.
Use fresh, high-quality eggs. They give the sauce a richer texture and a more vibrant, golden colour.
