Luca Ciano's Roasted Peach ‘alla piemontese' with Dark Chocolate and Amaretti

INGREDIENTS 

4 peaches 

80g amaretti biscuits crumbled, Chiostro di Saronno 

100g dark chocolate 70%, finely chopped 

1 shot glass of Amaretto (liquor) 

 

Whipped Cream

600ml whipping cream 

1½ tbsp icing sugar + 2 tbsp to garnish 

1 vanilla bean 

 

Chocolate Sauce

50g dark chocolate 70% 

100g heavy cream 

 

To Serve

10 mint leaves 

2 tbsp icing sugar

Amaretti biscuits, to garnish

METHOD:

1.  Preheat the oven to 180°C.

2. Cut peaches in half, remove seeds and scoop 2/3 of the inside out. Roughly chop the peach’s trimmings, add chocolate and amaretti biscuit, Amaretto liquor and mix well. Fill all the peaches with the mixture. 

3. Cook peaches in the oven for 20-30 minutes, till soft and golden in colour. 

4. Meanwhile, add icing sugar and vanilla beans to the cream and whip till firm. Transfer into a piping bag and keep in the fridge until ready. 

5. Place the chocolate into a heatproof bowl. Bring the heavy cream to a boil, remove from the heat and pour onto the chocolate to make a chocolate sauce. Stir until all the chocolate is melted.

6. Once the peaches are cooked, remove from the oven and allow to cool. Garnish the top of each peach with whipped cream, chocolate sauce, Amaretti biscuits, icing sugar and mint.
