Fast and easy fish and chips with Eliza Stankovic-Mowle

Dukka crumbed salmon with sweet potato chips and garlic aioli

Serves 4

 

¼ cup flour

2 eggs, beaten

½ cup breadcrumbs

½ cup dukka

4 x 180 g salmon fillets, cut into 1 cm strips

1 large sweet potato, peeled and sliced in 0.5cm slices

Olive oil spray

2 limes, to serve

2 baby cos lettuces, to serve

 

Roast garlic aioli

6 roasted garlic cloves

½ cup mayonnaise

 

HOW TO SET THE OVEN: OTHER FUNCTIONS > AIRFRY > 250°C

 

Set the oven and place the telescopic rails at level 3. For roast garlic aioli, combine garlic and mayonnaise and mix well.  Cover and refrigerate until serving. Set up a three bowl crumbing station by placing flour in one bowl, eggs in another and combined breadcrumbs and dukka in another.  Dip salmon strips in flour, eggs and dukka breadcrumbs, pressing well. Place sweet potato slices on air fry tray and add salmon strips.  Lightly spray with olive oil spray and bake on level 3 for 14 minutes. Serve salmon and sweet potatoes with roast garlic aioli and baby cos lettuce leaves.
